Autumn Spiced Steamed Cupcakes

Makes 24 small buns


  • 175ml sunflower oil
  • 175g soft brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract or bean paste
  • 200g grated butternut squash
  • 100g sultanas
  • 1 orange – the zest of
  • 2 tsp mixed spice
  • 200g self-rising flour
  • 2 tsp baking powder
  • Chocolate spread e.g. Nutella or a supermarket own brand

2 x 12 hole muffin tins and 24 small bun cases with paper insides and foil outside or 24 silicon bun cases

  1. In a bowl mix together the oil, sugar, eggs and vanilla
  2. Add the grated squash
  3. Stir in the mixed spice, flour, baking powder and orange zest
  4. Share the mix out between the 24 cases, putting a spoon in each
  5. Cook in the steam cavity at 100° steam for 12 min
  6. As soon as they are cooked remove from the tins and place on a wire rack to cool
  7. Spread each one with chocolate spread
