Steamed Lemon Puddings

Lemon Pudding

Ingredients ​​​​​​​

  • Butter for greasing
  • 8 tablespoons of lemon curd (see separate recipe for how to make homemade lemon curd in the steam oven)

Pudding batter

  • 180g butter
  • 180g caster sugar
  • 180g self-raising flour
  • 3 eggs
  • Zest of 1 lemon


  • You will need 8 mini loaf cake tins or a similar sized cooking tin suitable for steaming

1. Liberally grease each individual loaf tin
2. Place 1 large tablespoon of lemon curd into the base of each mini tin
3. Place the mini tins onto the perforated (or solid) baking tray
4. Add all of the pudding batter ingredients to a large mixing bowl or into the bowl of a stand mixer
5. Beat everything together until you have a smooth batter
6. Divide the mixture between the 8 mini tins
7. Place into the steam oven and set the cook time for 15 minutes at 100° steam and press play
8. When the time is up remove the mini tins from the steam oven. Tip the lemon puddings out onto a serving plate and serve warm with cream, custard or ice cream
