A great way to utilise over ripe banana's and a fun activity to involve the children in.
This recipe has been developed especially for Rangemaster by Product Training Manager, Lindsey Payne.
Makes 12 full size muffins
Ingredients
- 150g plain flour (White / Spelt)
- 2 teaspoon baking powder
- 1/2 teaspoon mixed spice
- 50g walnuts (small pieces)
- 50g sultanas
- 60g plant spread or butter
- 4 large very ripe bananas
- 2 large eggs or 2 tbsp of ground linseed mixed with 6 tbsp of hot water
- Optional: chocolate chips
- Preheat the oven to 190C
- Melt the butter and mix the linseed with water if using instead of eggs
- Mix all of the dry ingredients together in a bowl
- Mash the bananas to a smoothish paste and then add the melted butter and eggs (or linseed) all together
- Add the dry ingredients to the banana mix and fold gently until just mixed together
- Divide the mixture into 12 muffin cases
- If desired, you can always add a thin slice of banana to the mixture once in the muffin cases
- Place and cook in the oven for 14 minutes
