Banana Muffins

A great way to utilise over ripe banana's and a fun activity to involve the children in. 

This recipe has been developed especially for Rangemaster by Product Training Manager, Lindsey Payne.

Banana Muffins

Makes 12 full size muffins 

Ingredients 

  • 150g plain flour (White / Spelt)
  • 2 teaspoon baking powder
  • 1/2 teaspoon mixed spice
  • 50g walnuts (small pieces)
  • 50g sultanas
  • 60g plant spread or butter
  • 4 large very ripe bananas
  • 2 large eggs or 2 tbsp of ground linseed mixed with 6 tbsp of hot water
  • Optional: chocolate chips

 

  • Preheat the oven to 190C
  • Melt the butter and mix the linseed with water if using instead of eggs
  • Mix all of the dry ingredients together in a bowl 
  • Mash the bananas to a smoothish paste and then add the melted butter and eggs (or linseed) all together
  • Add the dry ingredients to the banana mix and fold gently until just mixed together
  • Divide the mixture into 12 muffin cases 
  • If desired, you can always add a thin slice of banana to the mixture once in the muffin cases
  • Place and cook in the oven for 14 minutes
