Dijon Mustard and Gherkin Potato Salad

INGREDIENTS

  • 1kg salad potatoes
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • Bunch of spring onion, sliced
  • 50g gherkins, drained and rinsed, diced

METHOD

  1. Put the potatoes in a large saucepan and cover with water. Bring to the water to the boil and simmer for 12-15 minutes, or until the potatoes are tender. Drain and rinse with cold water and then leave the potatoes to cool.

  2. Mix together the mayonnaise and Dijon mustard. Season with black pepper. Drizzle the dressing over the potatoes and stir well to ensure the potatoes are well coated. Add the spring onion and diced gherkins. Stir well and serve.
