Halloween Biscuits

Halloween Biscuits

This is a basic biscuit recipe that you can choose the flavouring for. There are lots of Halloween shaped cookie cutters in the shops so you can make pumpkins, cats, ghosts, bats and lots of other Halloween related shapes. This amount will make about 10 biscuits depending upon the cutter size you use, so double up the recipe if you need more. You can now buy coloured icing ready-made, to squeeze onto the iced biscuits, great for those little hands to try! These biscuits can also be dipped into melted chocolate, great for the pumpkins and bats!

Ingredients

  • 100g/3½ oz butter, softened
  • 100g/3½ oz caster sugar, golden or white
  • 1 egg
  • 275g/10oz plain flour
  • 1 teaspoon vanilla essence or
  • ½ teaspoon ground cinnamon/nutmeg/mixed spice or a combination or
  • the grated rind of an orange or lemon or
  • 1 teaspoon of poppy seeds 

For the decoration:

  • 225g/8oz icing sugar, sifted
  • food colourings of your choice
  • tubes of coloured ready-made icing for piping
  • chocolate for melting

Preparation method 

  1. Preheat the oven to 190ºC conventional oven, centre shelf; 180ºC fan oven; Gas 5
  2. Line a baking tray with baking parchment or Bake-o-Glide
  3. Cream the butter and caster sugar together until pale and fluffy
  4. Beat in the egg and vanilla extract or citrus zest if using
  5. Gently fold in the sieved flour and spice if using, mix gently until a dough is formed
  6. Lightly flour your work surface and roll the biscuit dough out until it is 1cm/½in thick
  7. Cut out the biscuits using your Halloween cutters and place onto the prepared tray
  8. Bake the biscuits until they are pale golden, about 8-10 minutes
  9. Leave them on the tray to rest for 5 minutes and then transfer to a cooling rack until completely cold
  10. Gradually mix the icing sugar with 2-3 tablespoons of hot water until the consistency is like cream. If you would like 2 different colours of icing divide it into 2 bowls before carefully adding the colours of your choice
  11. Use immediately to cover the cooled biscuits and pipe the ready made icing to decorate, when it has set
  12. If you wish, leave some biscuits without icing and partially dip them into melted chocolate and then decorate.
