Summer Delight
Vanilla Ice-Cream with Blueberry Sauce
Enjoy a dish of homemade vanilla ice cream and blueberries while you watch Wimbledon - cream and blue are now the colours for Wimbledon! 
You do not need an ice cream maker for this recipe, just a food mixer.  It will freeze perfectly in your Rangemaster Side x Side fridge freezer! 
This ice-cream remains quite soft unlike some homemade ice creams.  Don’t forget that blueberries are a ‘superfood’, they give us more energy and help fight old age.  They contain anti-oxidants, more than any other vegetable or fruit. 
So eat more blueberries to stay healthy!

INGREDIENTS

6 medium eggs, separated
125g/4oz golden syrup
568ml double cream
2 tablespoons of good vanilla extract (with seeds)
 225g blueberries, washed
 2 tablespoons sugar
½ teaspoon vanilla extract

 
Summer Delight
1.Whisk together the egg yolks and syrup, in a large bowl, until they are thick and pale in colour and leave a trail when the whisk is taken out of the mixture.
2.In another bowl whisk the cream until it just starts to thicken and hold it’s shape.  (if you over whisk it, it is harder to incorporate into the yolk mixture)
3.Using a large metal spoon, gently fold the cream into the egg yolk mixture.  Place the bowl into the fridge.
4.Using a clean and dry bowl whisk the egg whites until they stand in soft peaks.
5.Fold a spoonful of the egg white into the egg mixture, followed by the remaining egg white and vanilla extract.
6.Transfer the mixture to a 1-litre freezer proof container and freeze until firm, approximately 5-6 hours.
7.Wash the blueberries, drain, and place in a pan.  Heat very gently so that the berries burst and release their juice, this may take about 15 minutes.  Taste, and if necessary add the sugar and vanilla extract, remember the ice cream is sweet, allow the blueberries’ natural flavour to come out and compliment it.
8.Allow to cool, and spoon over the ice cream.
