Yeast and Fat Free Bara Brith
This quantity makes 1 loaf.


450g/1lb mixed dried fruit
300ml/½ pint tea
2 tablespoons marmalade
1 egg lightly beaten
6 tablespoons soft brown sugar
1 teaspoon mixed spice
½ teaspoon ground cinnamon
a good grating of nutmeg (optional)
450g/1lb self raising flour
honey to glaze the cooked loaf

 

 
Method
  1. Soak the fruit in the tea overnight in a bowl covered with cling film.
  2. Grease a 900g/2lb loaf tin.
  3. Mix the marmalade, egg, sugar, spices and flour into the soaked fruit. Transfer the mixture to the prepared tin.
  4. Bake in a pre-heated oven 160°C fanned oven, 170°C conventional oven, gas mark 3, for 1¾ hours.
  5. Check the loaf from time to time to make sure it isn’t over browning. If it is cover with a piece of foil.
  6. Remove from the oven and leave in the tin for 5 minutes, and then turn out on to a cooling rack.
  7. Brush honey over the top of the loaf and allow to cool.
  8. Serve sliced with butter, preferably Welsh!
