225g/8oz self raising flour ½ teaspoon mixed spice 110g/4oz butter, plus some for cooking 85g/3oz caster sugar, plus a little for serving 2oz sultanas, currants or raisins (or a mixture) 1 egg, lightly beaten a little milk
Method
Rub the butter into the sifted flour and spice until it resembles fine breadcrumbs.
Add the sugar and dried fruit, mix together, then add the egg plus a little milk if necessary, to combine to a dough.
Roll out on a lightly floured surface until it is 5mm/¼ inch thick.
Cut into rounds with a fluted cutter.
Heat a griddle or a non-stick frying pan. Rub it with a little butter.
Cook the Welsh Cakes turning them once after 2-3 minutes, when they should be a lovely golden brown.
Remove from the pan, dust with caster sugar and serve warm
