Easter Biscuits

• Makes 18-36 biscuits, depending on size

Equipment 
Scales
2 mixing bowls
wooden spoon or food mixer
whisk,
metal tablespoon
pastry board or clean work surface
rolling pin
biscuit cutters
baking sheet(s)
oven gloves
decoration piper

Ingredients

100g / 3 ½ oz butter or margarine
75g / 2¾ oz caster sugar
2 eggs, separated
175g / 6oz plain flour
¼ tsp ground cinnamon
¼ tsp ground mixed spice
50g /1¼ oz currants

Ready-mixed icing decoration, optional
Chocolate sprinkles, optional

Method
Pre-heat the oven to 180 °C l 350° F/ gas 4.
Cream the fat and sugar together in a food mixer or by hand in a mixing bowl using a wooden spoon until pale and soft.
In a separate bowl, whisk the egg whites until they form stiff peaks.
Beat the egg yolks into the creamed mixture, then fold in the flour, spices and the currants to make a dough.
Finally, stir the egg whites into the mixture using the tablespoon.
Roll out the dough on a lightly floured surface and cut out the biscuits.
Transfer to the baking sheet and bake for about 12 minutes in the pre- heated oven.
Remove and cool on a wire rack.
Decorate with sprinkles or write a message on them with the ready-made icing.
Store in an airtight tin.
