Ingredient of the Month: Lamb
Those warm Spring days may still feel far away but the daffodils and crocuses have arrived and your local butcher can offer cuts of sweet tasting succulent British lamb. Whilst lamb is now available year round, spring lamb is usually six to seven months old making it more tender with a subtler flavour. It is traditionally paired with rosemary or mint, which are both also in season.
