Ingredient of the Month: Rhubarb
Forced rhubarb is available before the normal rhubarb season, to achieve this the roots are dug up between November and January and replanted in large sheds. It has a lighter pink colour and more delicate flavour than later rhubarb due to being kept away from natural light. Rhubarb is a good source of vitamin C, dietary fibre and calcium and is in fact a vegetable despite being used as a fruit. |
