Shortbread with a Malty Millionaire option

Shortbread. So simple and yet so good. Only three ingredients can make you a wonderful, buttery, crumbly biscuit which is perfect to have on your own with a moment of calm and a cup of tea or to package up into a gift. Not only that, but you can use it as a base for all sorts of wonderful sweet treats - perhaps with cream or mousse on top or indeed, millionaire shortbread. However, I’ve always had dubious results when it comes to the caramel part of the shortbread-for-rich-people so I’m sharing a cheats method with you which I discovered by throwing a load of ingredients in my baking cupboard into a pan and has since become a family favourite.0 Comments

This week is National Vegetarian Week. Whilst their aim is to get you eating veggie for a whole week, this recipe is aimed more at the idea of foregoing meat for just one day a week. There are many arguments in support of one meat-free day a week which cite its environmental benefits and these are no small reason why it’s worth considering but I’m no scientist so I’ll leave you to form your own opinions there. However, I would suggest that an initiative like “0 Comments ” is worth a look for a much more mercenary reason - it can be really cheap to cook a vegetarian meal. Some sweet potatoes, a few carrots, some celery, mushrooms, onion, a can of beans and tomatoes will usually amount to less than half the cost of one pack of beef mince but can feed the same amount of people. Think of it less as missing out on meat and more as an easy way to boost your vegetable intake and try out different recipes.

Roast lamb is the Easter family meal of choice and it’s true, there are few things that can beat a great roast lamb dish. But with spring, perhaps even summer trying to show its face and with Easter holidays perhaps making things a bit more rushed I thought it would be nice to bring you something lighter, less time consuming and more informal. Easy Batch-Bake Biscuits

The Rangemaster tall side oven is a wonderful thing - the slight variation in heat from top to bottom is a boon, allowing you to crisp up the roasties at the top while the apple crumble bubbles away below. It’s great for cooking an entire meal but it really comes into its own when you want to batch cook things. Trays full of roasted vegetables, jacket potatoes to feed an army, lasagnes and all sorts of good, wholesome food can be racked up to eat now or to freeze and store later. Yes, all sorts of good, wholesome food…. or cookies. You can whip up an awful lot of cookies in a very short space of time with the tall oven. Even better, you can pre make the dough in all sorts of different flavours and have it stored in the freezer so that you can bring out mounds of freshly baked biscuits in the time it takes for the oven to heat + 10minutes.
Chocolate Tart with Meringue Kisses

Ah valentine’s day, an excuse for all things chocolate, pink and heart shaped. This month I’m making the most of the multifunction oven to make a chocolate tart. The base is wholemeal which gives it a great al-dente chew to it and ensure that it is not too sweet, which in turn sets off the rich chocolate centre and sugary meringues.

Not everyone loves Christmas pudding and even if you do, it can be a bit much at the end ofa full Christmas Dinner. This dessert makes a lighter alternative and is quick and easy to assemble, especially if you make the biscuits ahead of time. It’s an ode to the Christmas drinks so popular in high street coffee shops at this time of year and who knows, maybe it’ll give you a nice caffeine boost at the end of the meal - just enough to make it through the washing up before you collapse in a heap.0 Comments
Sweet Potato Fruit Bread with homemade Nutella

Fruit-bread toast and chocolate spread. That comes into the category of naughty but nice, right? Well, let me be your little ray of sunshine today (yeah, sunshine, remember that?) because this toasty goodness is actually at the healthy end of the spectrum.
The bread is made with sweet potato and chickpeas so it’s sweet but not too sweet, incredibly filling and full of slow release energy. The loaf is studded with prunes to give it little pockets of gooey goodness that also serve to up the fibre content and the crunchy roasted chickpeas on the top give it a lovely crunch to contrast the more solid texture of the inside.0 Comments

We’re finally there. Gone are the teasing summer months when hot, sweltering gorgeous sunny days mix equally and frequently with grey, rainy nothing-type days. Autumn has begun. Cold nights, blue skies, crunchy leaves. This recipe was meant to be for bonfire night but you may notice that I’ve basically thrown the autumn kitchen-sink at it. I has wholemeal for stodgy goodness, pumpkin as a nod to the increasingly pervading PSL flavour, crumble topping because we’re heading towards custard season and toffee apple to keep the 5th Novemberists happy.0 Comments
