Picnic Pick-and-Mix Handpies

Summer holidays are here and getting outdoors is a great thing to do with the family when you’ve been cooped up in schools and offices all year. Add a a picnic into the mix you've got yourself an adventure - especially when you take the unreliable British weather into account. This recipe will not only make an event out of prepping for the picnic, but it’ll provide a range of options for young and old and something comforting enough to eat in the car hiding from the rain or light enough to eat sat in the sun. You can make the pastry with the kids and lay out all the filling options for them to choose from so that they can make their lunch and mark the tops of the pies as they wish.

I chose to make my own shortcrust pastry but shop bought is as good, if not better and a whole lot less hassle.

There’s no end to the options for filling these tartlets and you can also make them into hand-pies by cutting larger rounds, putting the filling in, painting the edges with milk or egg, folding over and crimping the join with a fork. These hand-pies are particularly great for dunking in ketchup or hot chocolate!

If you want to make your own though here's the recipe:



  • 225g Plain flour
  • 115g marg / butter cut into chunks
  • Cold water
  • 1 tsp sugar
  • Pinch of salt



  1. Put the butter, flour, sugar and salt in a bowl
  2. Rub together the butter and flour until they resemble breadcrumbs
  3. 1 tbsp at a time, add the water bringing together the dough with your hands - it’ll probably be about 3tbsp
  4. Chill for 15 mins
  5. Roll out as thin as possible and stamp out rounds using a glass or cookie cutter
  6. Place in a jam-tart tin or if making hand-pies line them up on greased proof paper ready to fill
  7. When filled, bake at 200c for 15mins until pastry is golden brown

Filling pick and mix filling options:

Savoury - Base mix of 70g grated cheese mixed with 1 beaten egg. Add any of the following - a tsp of pesto, some chopped mushroom, tomato, chopped ham, feta, olives, chopped spring onion, and a dollop of pickle at the bottom.

Sweet - Jam or marmalade, peanut butter with jam or a square of chocolate, lemon curd, nutella.

For the hand-pies you can halve a marshmallow and add a little chocolate,
