Meringue Girls Mixture

Try out this failproof mixture by meringue aficionados, the Meringue Girls, for deliciously decadent meringue kisses - ideal for parties and the festive season ahead!
In the words of Jon Snow “Winter is coming!” and there is no better way to warm the cockles of your heart, than baking some delicious, mallowy meringues.

Using a rainbow array of colours, our Meringue Girls kisses are guaranteed to bring summer back into your kitchen.
First things first, pre-heat your oven to 200°C/Gas 6. Here at Meringue Girls HQ, we are completely and utterly in love with our Rangemaster Professional +FX oven.

Next up, line a roasting tray with baking paper and pour in 300g of caster sugar – leave to bake for about 5 minutes until slightly melted around the edges.
Meanwhile, pop 150g of egg whites into a freestanding mixer and whisk slowly, allowing little bubbles to form. Turn the mixer to full speed, and slowly begin to incorporate your heated sugar to the mixture. Whisk until you have a fluffy, stiff mixture. During this time, reduce your Rangemaster oven temperature to 100°C/Gas ¼.
Now onto colour! Your meringues can never be too bright or too colourful – fact. Take a large piping bag, turn it inside out, and paint thick stripes of natural food colouring from the tip of your piping bag to halfway down the bag (about 5 stripes). Then carefully spoon your glossy meringue mixture into the piping bag, snip the end and you are good to go.
With this mixture, you will be able to make around 35 kisses.
Once all of your kisses have been piped, pop them in the Rangemaster oven for 30-40 minutes. Take them out of the oven as soon as they easily lift off of the baking paper with their bases intact.
Now wrap up warm, pop the kettle on and enjoy your delicious meringue kisses!
