Easy Batch-Bake Biscuits

The Rangemaster tall side oven is a wonderful thing - the slight variation in heat from top to bottom is a boon, allowing you to crisp up the roasties at the top while the apple crumble bubbles away below. It’s great for cooking an entire meal but it really comes into its own when you want to batch cook things. Trays full of roasted vegetables, jacket potatoes to feed an army, lasagnes and all sorts of good, wholesome food can be racked up to eat now or to freeze and store later. Yes, all sorts of good, wholesome food…. or cookies. You can whip up an awful lot of cookies in a very short space of time with the tall oven. Even better, you can pre make the dough in all sorts of different flavours and have it stored in the freezer so that you can bring out mounds of freshly baked biscuits in the time it takes for the oven to heat + 10minutes.
Here’s the recipe you need for near-instant cookie mountains. Don’t blame me.
- 120g butter
- 120g caster sugar
- 1 egg
- 230g plain flour (I used wholemeal for 1/3rd of this)
Note: I multiplied this by three and made 4 logs of cookie dough to freeze
You will also need a roll of baking parchment.
- 1/2 tsp cinnamon
- Chopped nuts (I used pistachio)
- Chopped chocolate
- Multicoloured sprinkles
- Anything you fancy!
Note: I made 1 x sprinkles, 1 x dark choc chunks, 1 x cinnamon and pistachio, 1x dark choc and seeds
- Cream the sugar and butter until light and fluffy.
- Beat in the egg, then add the flour and mix until stiff and combined.
- It’s fine if it’s a bit sticky, but you can add a little milk if you want to.
- Separate your dough into as many different sections as you want flavours.
- Put the dough in a bowl and use a knife to cut the additions into the dough until thoroughly combined.
- Tear off a sheet of baking parchment and roll the dough back and forth on it to create a long sausage which is about 3cm short of each side.
- Roll the dough up in the baking parchment and tuck the ends in.
- Put in the freezer.
When you want to bake the biscuits:
- Heat your Rangemaster side oven to 180c
- Line baking trays with parchment
- Take the dough from the freezer; slice off as many 1cm discs as you want
- Bake for 10mins.
